Ingredients

  • 8 Large eggs
  • 4 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon White vinegar
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.25 cup Sharp cheddar cheese, shredded
  • 1 teaspoon Paprika
  • 1 tablespoon Chives, finely chopped

Directions

Step 1

Place the eggs in a medium-sized saucepan and cover them with cold water by about 1 inch.

Step 2

Bring the water to a rolling boil over medium-high heat, then cover the pan and remove it from the heat. Let the eggs sit in the hot water for 10 minutes.

Step 3

Carefully drain the hot water and transfer the eggs to a bowl of ice water to cool. Allow them to cool completely for about 5 minutes.

Step 4

Peel the eggs and slice them in half lengthwise. Gently scoop out the yolks and place them in a medium mixing bowl.

Step 5

Mash the yolks with a fork until they are crumbly and smooth.

Step 6

Add the mayonnaise, Dijon mustard, white vinegar, salt, and black pepper to the bowl. Mix until the filling is creamy and well combined.

Step 7

Fold in the shredded sharp cheddar cheese evenly.

Step 8

Using a spoon or a piping bag, fill the egg white halves with the yolk mixture.

Step 9

Sprinkle the filled eggs with paprika for color and a hint of smokiness.

Step 10

Garnish with finely chopped chives for a fresh, herby touch.

Step 11

Serve immediately or refrigerate until ready to serve (up to 6 hours).
