Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 2 large Eggs
  • 1 cup Milk
  • 0.5 cup Canola oil
  • 2 teaspoons Vanilla extract
  • 1.5 cups Fresh blueberries
  • 1 teaspoon Lemon zest
  • 1 tablespoon All-purpose flour (for coating blueberries)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease six mini loaf pans or line them with parchment paper.

Step 2

In a large bowl, whisk together the 2.5 cups of flour, sugar, baking powder, and salt.

Step 3

In a separate medium bowl, beat the eggs. Add the milk, canola oil, and vanilla extract, mixing until well combined.
