Ingredients

  • 0.5 cup Unsalted butter
  • 0.25 cup Granulated sugar
  • 5 tablespoons Unsweetened cocoa powder
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 cups Graham cracker crumbs
  • 1 cup Sweetened shredded coconut
  • 0.5 cup Unsalted butter (for filling)
  • 2 tablespoons Custard powder
  • 2 cups Powdered sugar
  • 2 tablespoons Heavy cream
  • 1 cup Semi-sweet chocolate chips
  • 2 tablespoons Unsalted butter (for topping)

Directions

Step 1

In a saucepan over low heat, melt 1/2 cup unsalted butter, 1/4 cup granulated sugar, and 5 tablespoons unsweetened cocoa powder. Stir until smooth and combined.

Step 2

Remove the saucepan from the heat and whisk in 1 large egg and 1 teaspoon vanilla extract. Return to low heat and cook for about 1-2 minutes, stirring constantly, until the mixture thickens slightly.

Step 3

In a large bowl, combine 2 cups graham cracker crumbs and 1 cup shredded coconut. Pour the chocolate mixture over the dry ingredients and mix until evenly combined.

Step 4

Press the mixture firmly into the bottom of an ungreased 8x8-inch pan. Place in the refrigerator while preparing the filling.

Step 5

For the filling, use a mixer to cream together 1/2 cup unsalted butter, 2 tablespoons custard powder, and 2 cups powdered sugar. Add 2 tablespoons heavy cream and beat until smooth and fluffy.

Step 6

Spread the custard filling evenly over the chilled crust. Return the pan to the refrigerator for 20-30 minutes to set.

Step 7

For the topping, melt 1 cup semi-sweet chocolate chips and 2 tablespoons unsalted butter in a microwave-safe bowl or over a double boiler. Stir until smooth.

Step 8

Pour the melted chocolate over the custard layer, spreading it evenly with a spatula. Chill in the refrigerator for at least 1 hour or until set.

Step 9

Once fully set, cut into 16 squares using a sharp knife. For cleaner cuts, warm the knife slightly under hot water and dry it before slicing.

Step 10

Serve chilled or at room temperature and enjoy!
