Ingredients

  • 4 cups cooked rice (cold, day-old rice works best)
  • 2 large eggs
  • 3 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 3 green onions (finely chopped)
  • 1 cup carrots (finely diced)
  • 1 cup peas (frozen or fresh)
  • 2 garlic cloves (minced)
  • 1 teaspoon ginger (minced)
  • 0.25 teaspoon white pepper
  • 0.25 teaspoon salt

Directions

Step 1

Prepare all ingredients by chopping vegetables, mincing garlic and ginger, and measuring out sauces. Break the eggs into a small bowl and lightly whisk them.

Step 2

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Pour in the whisked eggs and scramble them until just set. Remove the eggs from the wok and set aside.

Step 3

Add the remaining 2 tablespoons of vegetable oil to the wok. Add the garlic, ginger, carrots, and peas, and stir-fry for 2-3 minutes, or until the vegetables are tender.

Step 4

Increase the heat to high. Add the cold, cooked rice to the wok, breaking up any clumps with the back of a spatula. Stir-fry the rice for 2-3 minutes until heated through.

Step 5

Drizzle in the soy sauce, oyster sauce, and sesame oil. Stir well to ensure the rice is evenly coated in the sauces.

Step 6

Return the scrambled eggs to the wok, breaking them into smaller pieces as you mix them into the rice. Add the white pepper and salt to taste.

Step 7

Stir in the chopped green onions and cook for an additional 1-2 minutes.

Step 8

Serve hot and enjoy your homemade Chinese fried rice with egg!
