Ingredients

  • 1 large Chicken carcass or bone-in chicken pieces
  • 2 large Carrots
  • 2 large Celery stalks
  • 1 large Onion
  • 3 large Garlic cloves
  • 2 Bay leaves
  • 10 Whole black peppercorns
  • 1 small bunch Fresh parsley
  • 12 cups Cold water
  • 1 teaspoon Salt

Directions

Step 1

1. Remove any large pieces of skin and excess fat from the chicken carcass or pieces to ensure a cleaner broth.

Step 2

2. Peel the carrots and cut them into large chunks. Do the same for the celery and onion.

Step 3

3. Smash the garlic cloves with the side of a knife to release their flavor. No need to peel them.

Step 4

4. Place the chicken carcass or bone-in pieces into the crock pot.

Step 5

5. Add the carrots, celery, onion, garlic cloves, bay leaves, peppercorns, and parsley on top of the chicken.

Step 6

6. Pour the cold water into the crock pot, making sure the ingredients are fully submerged but not overflowing. Add the salt.

Step 7

7. Cover and set the crock pot to low heat. Cook the broth for 8-10 hours, or overnight. The longer it cooks, the richer the flavor will be.

Step 8

8. Once cooking is complete, turn off the crock pot and let it cool slightly (about 15-20 minutes).

Step 9

9. Strain the broth through a fine-mesh sieve or cheesecloth into a large bowl or container. Discard solids.

Step 10

10. Let the broth cool completely, then refrigerate. Once chilled, skim off any solidified fat on the surface if desired.

Step 11

11. Store the broth in airtight containers in the refrigerator for up to 5 days or freeze for longer storage.
