Ingredients

  • 2 pounds beef chuck, cubed
  • 3 tablespoons olive oil
  • 1 cup red wine vinegar
  • 0.5 cup red wine
  • 4 cloves garlic, minced
  • 15 pieces onions, small (pearl or cipollini), peeled
  • 1 14-ounce can canned diced tomatoes
  • 1.5 cups beef broth
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon allspice
  • 2 pieces bay leaves
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy pot over medium-high heat.

Step 2

Season the beef cubes with salt and pepper, then sear them in the hot oil until browned on all sides. Remove the beef and set it aside.

Step 3

In the same pot, add the remaining olive oil. Reduce the heat to medium and sauté the garlic until fragrant, about 1 minute.

Step 4

Add the whole peeled onions and cook, stirring occasionally, until they caramelize slightly, about 5-7 minutes.

Step 5

Deglaze the pot with the red wine vinegar and red wine, scraping up any browned bits from the bottom of the pot.

Step 6

Return the beef to the pot, then add the diced tomatoes, beef broth, cinnamon, allspice, bay leaves, sugar, and dried oregano. Stir to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors are well-blended. Stir occasionally to prevent sticking.

Step 8

Taste and adjust seasoning with additional salt and pepper if needed.

Step 9

Remove the bay leaves before serving.

Step 10

Serve hot, garnished with crumbled feta cheese and fresh parsley on top. Pair with crusty bread, rice, or orzo pasta for a complete meal.
