Ingredients

  • 500 grams beef liver
  • 2 large onions
  • 240 milliliters milk
  • 60 grams all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 3 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1 tablespoon fresh parsley

Directions

Step 1

Rinse the beef liver under cold water and pat dry with paper towels.

Step 2

Place the liver slices into a shallow dish and pour the milk over them. Let them soak for 15-20 minutes to help reduce the strong flavor of the liver.

Step 3

While the liver is soaking, peel and thinly slice the onions.

Step 4

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of vegetable oil over medium heat.

Step 5

Add the sliced onions to the skillet and cook, stirring occasionally, until softened and golden brown, about 12-15 minutes. Remove the onions and set aside.

Step 6

Combine the flour, salt, black pepper, and paprika in a shallow dish or plate. Remove the liver from the milk and dredge each slice in the seasoned flour mixture, shaking off any excess.

Step 7

In the same skillet used for the onions, add the remaining butter and oil and heat over medium-high heat.

Step 8

Add the liver slices to the skillet and cook for 2-3 minutes on each side, or until browned and just barely cooked through. Avoid overcooking, as the liver can become tough.

Step 9

Return the caramelized onions to the skillet, arranging them around and over the liver slices. Heat through for 1-2 minutes.

Step 10

Sprinkle with fresh parsley for a finishing touch and serve warm. This dish pairs wonderfully with mashed potatoes or a fresh green salad.
