Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 tablespoon Kosher salt
  • 1 teaspoon Black pepper
  • 4 tablespoons Butter (optional, for serving)
  • 0.5 cup Sour cream (optional, for serving)
  • 0.25 cup Chopped green onions (optional, for serving)
  • 0.5 cup Shredded cheddar cheese (optional, for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the russet potatoes thoroughly under running water to remove any dirt. Pat them dry with a clean kitchen towel or paper towels.

Step 3

Using a fork, poke 6–8 holes around each potato to allow steam to escape during baking.

Step 4

Rub each potato with olive oil, ensuring they are evenly coated. Sprinkle kosher salt and a pinch of black pepper over the entire surface of each potato.

Step 5

Place the potatoes directly on the middle oven rack, spacing them apart to allow heat to circulate evenly. You may place a baking sheet on the rack below to catch any drippings.

Step 6

Bake the potatoes for 50–60 minutes, or until the skin is crispy and a knife slides easily into the center of the potato.

Step 7

Carefully remove the potatoes from the oven using tongs or an oven mitt. Let them rest for 5 minutes to cool slightly.

Step 8

To serve, slice each potato lengthwise down the center and fluff the interior with a fork. Top with butter, sour cream, chopped green onions, and shredded cheddar cheese as desired.
