Ingredients

  • 3 cups Mashed potatoes
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Green onions, finely chopped
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Paprika
  • 2 tablespoons Vegetable oil or melted butter (for greasing)

Directions

Step 1

Preheat your oven to 400°F (200°C). Lightly grease a baking sheet with vegetable oil or melted butter, or line the sheet with parchment paper for easier cleanup.

Step 2

In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, and green onions.

Step 3

In a separate small bowl, beat one of the eggs and add it to the mashed potato mixture. Stir to combine well.

Step 4

Season the mixture with salt, black pepper, garlic powder, and paprika. Mix until everything is evenly distributed.

Step 5

Shape the mashed potato mixture into patties, about 3 inches in diameter and 1 inch thick. You should end up with around 8-10 patties, depending on their size.

Step 6

In a shallow dish, whisk the remaining egg. Place the breadcrumbs in another shallow dish.

Step 7

Dip each patty into the whisked egg, coating both sides, and then into the breadcrumbs, pressing gently to ensure an even coating.

Step 8

Place the coated patties onto the prepared baking sheet, spacing them apart to avoid sticking.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the patties are golden brown and crispy. Turn them over halfway through baking for even browning.

Step 10

Remove from the oven and let cool for a few minutes before serving. Serve warm with your choice of dipping sauces, such as sour cream, ranch dressing, or ketchup.
