Ingredients

  • 480 grams Whole wheat flour
  • 120 grams All-purpose flour
  • 360 milliliters Warm water (110°F/45°C)
  • 60 milliliters Honey
  • 30 milliliters Olive oil
  • 10 grams Salt
  • 7 grams Instant yeast
  • 10 grams Optional toppings (e.g., oats, seeds)

Directions

Step 1

Attach the dough hook to your Kitchenaid stand mixer.

Step 2

In the mixer bowl, combine warm water, honey, and instant yeast. Let it sit for 5 minutes until bubbly to activate the yeast.

Step 3

Add whole wheat flour, all-purpose flour, olive oil, and salt to the bowl.

Step 4

Mix on low speed using the dough hook until the ingredients begin to come together, about 2 minutes.

Step 5

Increase the mixer speed to medium and knead for 8–10 minutes, or until the dough is smooth and elastic. If the dough is too sticky, add more flour, 1 tablespoon at a time.

Step 6

Lightly oil a large bowl and place the dough inside. Cover it with a clean kitchen towel or plastic wrap. Let the dough rise in a warm place for 1–1.5 hours, or until it doubles in size.

Step 7

Punch down the dough and transfer it to a lightly floured surface. Shape the dough into a loaf by rolling or folding it to fit a standard 9x5-inch loaf pan.

Step 8

Place the dough seam-side down into a greased loaf pan. Cover again and let it rise for another 30–40 minutes, or until it has doubled in size.

Step 9

Preheat the oven to 375°F (190°C). If desired, brush the top of the dough with a bit of water and sprinkle with oats or seeds for garnish.

Step 10

Bake the bread for 30–35 minutes, or until it is golden brown and sounds hollow when tapped.

Step 11

Remove the loaf from the pan and cool completely on a wire rack before slicing.
