  • 6 cups vegetable broth

  • 1 cup frozen vegetables (e.g., peas, corn, green beans)
  • 2 cups fresh spinach or kale
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup optional cooked pasta, rice, or quinoa

Directions

Step 1

Heat the olive oil in a large pot over medium heat.
