Ingredients

  • 250 grams All-purpose flour
  • 200 grams Unsalted butter
  • 40 grams Powdered sugar
  • 10 grams Vanilla sugar or vanilla bean paste
  • 100 grams Ground almonds
  • 2 pieces Egg yolks
  • 50 grams Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, powdered sugar, vanilla sugar (or paste), and ground almonds. Mix until well combined.

Step 3

Cut the unsalted butter into small cubes and add it to the dry ingredients. Using your hands or a pastry cutter, rub the butter into the flour mixture until the texture resembles coarse crumbs.

Step 4

Add the egg yolks to the butter and flour mixture. Knead gently with your hands until a smooth dough forms. Avoid overworking the dough as it may become tough.

Step 5

Wrap the dough in plastic wrap and refrigerate it for 30 minutes to 1 hour. This helps the dough firm up and is easier to shape.

Step 6

After chilling, divide the dough into small portions (about 20-25 grams each). Roll each portion into a small log and shape into a crescent moon.

Step 7

Place the crescents onto the prepared baking sheets, leaving about 2 cm space between each cookie.

Step 8

Bake the cookies in the preheated oven for 12-15 minutes or until the edges are just lightly golden. Avoid overbaking to keep the cookies tender.

Step 9

Remove the cookies from the oven and let them cool slightly on the baking sheet for about 5 minutes.

Step 10

While the cookies are still warm, gently toss or dust them with the additional powdered sugar. Allow to cool completely before serving or storing in an airtight container.
