Ingredients

  • 450 grams fresh green beans
  • 2 tablespoons unsalted butter
  • 2 garlic cloves
  • 2 tablespoons all-purpose flour
  • 240 milliliters whole milk
  • 120 milliliters heavy cream
  • 60 grams grated Parmesan cheese
  • 0.5 teaspoons ground black pepper
  • 1 teaspoons kosher salt
  • 0.5 teaspoons onion powder
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Trim the ends off the green beans and rinse them under cold water. Set aside.

Step 2

Bring a medium pot of salted water to a boil. Add the green beans and cook for 4-5 minutes, or until tender-crisp. Drain and immediately plunge into a bowl of ice water to stop the cooking process. Drain again and set aside.

Step 3

In a large skillet, melt the butter over medium heat. Mince the garlic cloves and sauté them in the butter for about 1 minute, or until fragrant.

Step 4

Sprinkle the flour over the melted butter and garlic. Stir continuously for 1-2 minutes to cook out the raw flour taste.

Step 5

Gradually whisk in the milk and heavy cream, ensuring no lumps remain. Cook the mixture, stirring frequently, until it begins to thicken, about 3-4 minutes.

Step 6

Stir in the Parmesan cheese, black pepper, kosher salt, and onion powder. Continue to stir until the cheese is melted and the sauce is smooth.

Step 7

Reduce the heat to low and add the cooked green beans to the skillet. Toss to coat the beans evenly in the creamy sauce.

Step 8

Cook the green beans in the sauce for another 2-3 minutes, allowing the flavors to meld.

Step 9

Transfer the creamy green beans to a serving dish, garnish with freshly chopped parsley, and serve warm.
