  • 200 grams Burdock root (gobo)
  • 1 medium Carrot
  • 1 tablespoon Sesame oil
  • 2 tablespoons Soy sauce
  • 1 tablespoon Mirin
  • 1 teaspoon Sugar
  • 1 tablespoon Sake
  • 1 teaspoon Toasted sesame seeds
  • 0.25 teaspoon Red chili flakes (optional)

Directions

Step 1

Peel the burdock root and rinse under running water to remove any remaining dirt. Cut it into matchstick-sized strips.

Step 2

Soak the sliced burdock root in a bowl of water for 10 minutes to remove bitterness, then drain and pat dry.

Step 3

Peel and cut the carrot into matchstick-sized strips of similar size to the burdock root.

Step 4

In a medium skillet or wok, heat the sesame oil over medium heat.

Step 5

Add the burdock root to the skillet and stir-fry for 2-3 minutes until slightly softened.

Step 6

Add the carrot to the skillet and continue stir-frying for another 2 minutes.
