  • 1 teaspoon lemon juice
  • 1 tablespoon butter
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel and dice the russet potatoes into small cubes, about 1/2 inch in size.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced potatoes and sprinkle with 1/2 teaspoon of salt and paprika. Cook for 12-15 minutes, stirring occasionally, until the potatoes are golden and crispy. Remove from the skillet and set aside.
