Ingredients

  • 4 cups romaine lettuce
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • 0.5 medium red onion
  • 0.5 cup feta cheese
  • 0.25 cup black olives
  • 1 cup quinoa
  • 2 cups water
  • 0.25 cup dried apricots
  • 0.25 cup slivered almonds
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the quinoa thoroughly under cold water to remove any bitterness.

Step 2

In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 12-15 minutes or until the quinoa is tender and the water is absorbed. Let it cool completely.

While the quinoa is cooling, wash and chop the romaine lettuce into bite-sized pieces. Place it in a large salad bowl.
