Ingredients

  • 4 cups Cooked chicken (shredded or diced)
  • 12 pieces Corn tortillas
  • 10.5 oz (1 can) Cream of chicken soup
  • 10.5 oz (1 can) Cream of mushroom soup
  • 10 oz (1 can) Diced tomatoes with green chilies (e.g., Rotel)
  • 1 cup Chicken broth
  • 1 medium Onion (chopped)
  • 1 medium Green bell pepper (chopped)
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 cups Shredded cheddar cheese
  • 1 as needed for greasing Cooking spray

Directions

Step 1

Preheat your oven to 350°F (175°C). If preparing for OAMC (Once-A-Month Cooking), skip preheating and prepare casseroles for freezing instead.

Lightly spray a 9x13-inch baking dish (or freezer-safe dish) with cooking spray.

In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies, chicken broth, chili powder, cumin, garlic powder, salt, and black pepper. Mix until smooth.
