  • 12 whole Corn tortillas
  • 2 cups Cheddar cheese, shredded

  • 1 medium Green bell pepper, diced
  • 2 tablespoons Butter
  • 1 can (10.5 oz) Cream of chicken soup
  • 1 can (10.5 oz) Cream of mushroom soup
  • 1 can (10 oz) Diced tomatoes with green chilies (Rotel)
  • 1 cup Chicken broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

In a large skillet, melt butter over medium heat and sauté the diced onion and green bell pepper until softened, about 5 minutes.

Add the cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies, chicken broth, ground cumin, chili powder, garlic powder, salt, and black pepper. Stir well and simmer for 3-5 minutes until the mixture is smooth and heated through. Remove from heat.
