Ingredients

  • 500 grams king prawns (raw, deveined, shells on)
  • 2 tablespoons vegetable oil
  • 2 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar (or light brown sugar)
  • 2 cloves garlic (finely minced)
  • 1 small piece bird’s eye chili (thinly sliced)
  • 2 tablespoons fresh coriander leaves (chopped)
  • 1 small piece shallot (finely sliced)
  • 1 tablespoon water

Directions

Step 1

Rinse the king prawns thoroughly under cold water. Pat them dry using paper towels and set them aside.

Step 2

Heat a large skillet or grill pan over medium-high heat and add the vegetable oil.

Step 3

Once the oil is hot, add the prawns to the pan in a single layer. Cook for 2-3 minutes on each side, or until the shells turn pink and the flesh is opaque. Remove from heat and set aside.

Step 4

In a small bowl, prepare the Thai dipping sauce by combining the lime juice, fish sauce, palm sugar, minced garlic, sliced chili, coriander leaves, sliced shallot, and water.

Step 5

Stir the sauce well until the sugar is completely dissolved and all ingredients are evenly incorporated.

Step 6

Arrange the cooked prawns on a platter and serve alongside the Thai dipping sauce.

Step 7

For added presentation, garnish the platter with extra coriander leaves and lime wedges.
