Ingredients

  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 14.5 ounces canned diced tomatoes (with juice)
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon hot sauce (like Tabasco)
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 1 bay leaf
  • 4 cups long grain white rice, cooked
  • 0.25 cup green onions, chopped (for garnish)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat.

Step 2

Season the chicken thighs with a pinch of salt and pepper, then brown on all sides in the skillet. Remove and set aside.

Add the sliced Andouille sausage to the skillet and cook until browned. Remove and set aside with the chicken.

Add the shrimp to the skillet and cook for 5-7 minutes, or until they turn pink and are cooked through.

Remove the bay leaf and adjust seasoning with more salt, pepper, or hot sauce, if needed.

Serve the King Creole over cooked white rice, garnished with green onions and fresh parsley.
