  • 2 pieces Chicken breasts (boneless, skinless)

  • 3 pieces Garlic cloves (minced)
  • 2 medium Carrots (diced)
  • 2 pieces Celery stalks (chopped)
  • 2 medium Russet potatoes (peeled and diced)
  • 2 tablespoons All-purpose flour
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 2 leaves Bay leaves
  • 1 teaspoon Thyme (dried)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley (fresh, chopped, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large pot over medium heat.

Step 2

Season the chicken breasts with salt and pepper, then add them to the pot. Cook for 4-5 minutes on each side until golden brown. Remove and set aside, letting them cool.

Step 3

In the same pot, add the remaining 1 tablespoon of butter and sauté the chopped onion, garlic, carrots, and celery until softened, about 5-6 minutes.

Sprinkle the flour over the vegetables and stir well to coat them evenly. Cook for 1 minute to eliminate the raw flour taste.
