Ingredients

  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup polenta
  • 4 cups chicken or vegetable stock
  • 2 tbsp unsalted butter
  • 1 cup shredded cheddar cheese
  • 0.5 cup milk
  • 2 tbsp fresh cilantro

Directions

Step 1

Finely chop the onion, garlic, and jalapeno peppers. Remove seeds from jalapenos if you prefer less spice.

Step 2

Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic. Cook for 2-3 minutes until softened and fragrant.

Add the ground beef to the skillet and cook, breaking it up with a wooden spoon, until browned, about 6-8 minutes.
