Ingredients

  • 125 grams Unsalted butter
  • 250 milliliters Guinness stout
  • 75 grams Cocoa powder
  • 400 grams Granulated sugar
  • 250 grams All-purpose flour
  • 2 teaspoons Baking soda
  • 0.5 teaspoon Salt
  • 140 grams Sour cream
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 200 grams Cream cheese (room temperature)
  • 100 grams Powdered sugar (sifted)
  • 100 milliliters Heavy cream

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 23 cm (9-inch) springform pan and line the base with parchment paper.

Step 2

In a medium saucepan, add the unsalted butter and Guinness stout. Heat over medium heat until the butter is melted. Remove from heat and whisk in the cocoa powder and granulated sugar until smooth. Set aside to cool slightly.

Step 3

In a large mixing bowl, combine the all-purpose flour, baking soda, and salt. Mix well to distribute the dry ingredients evenly.

Step 4

In another bowl, whisk together the sour cream, eggs, and vanilla extract until smooth.

Step 5

Gradually pour the slightly cooled Guinness mixture into the sour cream mixture, whisking continuously.

Step 6

Add the wet mixture into the bowl with the dry ingredients. Using a spatula, gently fold everything together until just combined. Be careful not to overmix.

Step 7

Pour the batter into the prepared springform pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.

Step 9

For the frosting, beat the cream cheese in a large bowl until smooth and creamy.

Step 10

Gradually add the powdered sugar and continue beating until well combined.

Step 11

Pour in the heavy cream and beat until the frosting is light and fluffy.

Step 12

Once the cake has completely cooled, remove it from the springform pan.

Step 13

Spread the cream cheese frosting generously over the top of the cake to resemble the frothy head of a pint of Guinness.

Step 14

Slice and serve. Store any leftovers in the fridge for up to 3 days.
