Ingredients

  • 3 cups cooked white rice (preferably day-old)
  • 1 cup kimchi (preferably aged)
  • 2 tablespoons kimchi brine
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 cloves garlic (minced)
  • 2 stalks green onions (chopped)
  • 1 tablespoon gochujang (Korean red chili paste)
  • 1 teaspoon sugar
  • 1 per serving egg (optional, fried or sunny side up)
  • 1 teaspoon toasted sesame seeds (optional, for garnish)

Directions

Step 1

Heat a large frying pan or wok over medium-high heat and add 2 tablespoons of vegetable oil.

Step 2

Add the minced garlic and sauté for 30 seconds until fragrant.

Step 3

Add the chopped kimchi to the pan and stir-fry for 2–3 minutes until it starts to soften and release its aroma.

Step 4

Mix in the kimchi brine, gochujang, soy sauce, and sugar, and cook for another 1–2 minutes, stirring well to incorporate the flavors.

Step 5

Reduce the heat to medium and add the cooked white rice to the pan. Break up any clumps with a wooden spoon or spatula as you mix it into the kimchi mixture.

Step 6

Drizzle the sesame oil over the rice and continue to stir-fry for 3–4 minutes until the rice is evenly coated and slightly crispy on the edges.

Step 7

Taste and adjust seasoning as needed (e.g., add more soy sauce or gochujang if preferred).

Step 8

Remove the pan from heat and transfer the kimchi fried rice to serving bowls.

Step 9

Top each serving with a fried egg if desired, and garnish with chopped green onions and toasted sesame seeds for added texture and flavor.
