Ingredients

  • 1 pound Flank steak
  • 3 tablespoons Lime juice
  • 2 tablespoons Soy sauce
  • 3 tablespoons Olive oil
  • 3 count Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Paprika
  • 1 count Red bell pepper, sliced
  • 1 count Green bell pepper, sliced
  • 1 count Yellow onion, sliced
  • 8 count Tortillas (flour or corn)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh cilantro, chopped (optional)
  • 0.5 cup Sour cream (optional)
  • 0.5 cup Guacamole (optional)

Directions

Step 1

In a medium mixing bowl, prepare the marinade by combining lime juice, soy sauce, 2 tablespoons of olive oil, minced garlic, ground cumin, chili powder, and paprika. Stir well.

Step 2

Place the flank steak in a shallow dish or resealable plastic bag. Pour the marinade over the steak, ensuring it is fully coated. Cover and refrigerate for at least 1 hour or up to overnight.

Step 3

Once marinated, remove the steak from the refrigerator and allow it to come to room temperature for about 10-15 minutes.

Step 4

While the steak rests, heat 1 tablespoon of olive oil in a large skillet or grill pan over medium-high heat.

Step 5

Add the sliced bell peppers and onion to the skillet. Sprinkle with salt and black pepper. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender and lightly charred. Remove the vegetables from the skillet and set aside.

Step 6

Increase the heat to high and add the steak to the same skillet. Cook for 3-4 minutes per side for medium-rare, or longer for desired doneness. Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Step 7

Slice the steak thinly against the grain for maximum tenderness.

Step 8

Warm the tortillas in a dry skillet or microwave for a few seconds until pliable.

Step 9

To assemble, place a portion of sliced steak on each tortilla, top with the sautéed peppers and onions, and garnish with chopped cilantro if desired. Serve with sour cream and guacamole on the side.
