Ingredients

  • 1 pound Shrimp (large, peeled and deveined)
  • 2 cups Fresh or frozen corn kernels
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1 medium Yellow onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 1 medium Potato (peeled and diced)
  • 2 stalks Celery (chopped)
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

In a large soup pot, melt the butter over medium heat. Add the chopped onion, celery, and garlic. Sauté for 4-5 minutes until the vegetables are softened and fragrant.

Step 2

Sprinkle in the flour and stir to coat the vegetables evenly. Cook for 1-2 minutes to remove the raw flavor of the flour.

Step 3

Slowly pour in the chicken or vegetable broth, whisking constantly to avoid lumps. Add the diced potato, corn kernels, paprika, salt, and black pepper. Bring the mixture to a boil, then lower the heat to a simmer.

Step 4

Cover the pot and let the soup simmer for 15 minutes, or until the potatoes are tender when pierced with a fork.

Step 5

Stir in the shrimp and heavy cream. Simmer for an additional 4-5 minutes, or until the shrimp are pink and cooked through.

Step 6

Taste and adjust seasonings as needed. If the soup is too thick, add a little more broth to reach your desired consistency.

Step 7

Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve warm with crusty bread or crackers on the side.
