Ingredients

  • 12 pieces Manicotti shells
  • 16 ounces Ricotta cheese
  • 8 ounces Mozzarella cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 10 ounces Frozen spinach, thawed and drained
  • 1 large Egg
  • 1 teaspoon Garlic powder
  • 2 teaspoons Dried Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 24 ounces Marinara sauce
  • 1 tablespoon Olive oil
  • 0.25 cup Fresh basil (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the manicotti shells according to package instructions until al dente, typically about 7-8 minutes. Drain and set aside to cool slightly.

Step 3

In a mixing bowl, combine the ricotta cheese, 4 ounces of the shredded mozzarella, Parmesan cheese, drained spinach, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

Step 4

Transfer the ricotta-spinach mixture to a piping bag or a large zip-top bag with the tip cut off for easy filling.

Step 5

Coat the bottom of a 9x13-inch baking dish with olive oil to prevent sticking. Spread 1 cup of marinara sauce evenly over the bottom of the dish.

Step 6

Carefully fill each manicotti shell with the ricotta mixture using the piping bag, and place them in a single layer in the prepared baking dish.

Step 7

Pour the remaining marinara sauce over the filled shells, ensuring they are completely covered.

Step 8

Sprinkle the remaining 4 ounces of shredded mozzarella cheese over the top.

Step 9

Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes to allow the cheese to brown and bubble.

Step 10

Remove from the oven and let rest for 5 minutes. Garnish with fresh basil leaves, if desired. Serve warm and enjoy!
