Ingredients

  • 115 grams unsalted butter
  • 200 grams granulated sugar
  • 2 pieces large eggs
  • 2 teaspoons vanilla extract
  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons salt
  • 240 milliliters sour cream
  • 2 cups apples (peeled, cored, and diced)
  • 50 grams light brown sugar
  • 1 teaspoon ground cinnamon (for topping)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and flour a 9-inch springform pan, or line it with parchment paper.

Step 2

In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 3

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients, mixing until just combined. Do not overmix.

Step 6

Gently fold in the diced apples until evenly distributed throughout the batter.

Step 7

In a small bowl, mix the light brown sugar and the additional ground cinnamon for the topping.

Step 8

Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon-sugar mixture evenly over the batter. Add the remaining batter on top, smoothing it out with a spatula, and then sprinkle the remaining cinnamon-sugar mixture on top.

Step 9

Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before serving.
