Ingredients

  • 2 large yellow onions
  • 2 cups buttermilk
  • 1.5 cups all-purpose flour
  • 0.5 cups cornstarch
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon baking powder
  • 4 cups vegetable oil
  • 0.5 cups mayonnaise
  • 0.25 cups ketchup
  • 1 teaspoon prepared horseradish
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon hot sauce
  • 1 teaspoon lemon juice

Directions

Step 1

Peel the onions and cut them into wedge-shaped petals approximately 1 inch wide at the base. Separate the layers and set aside.

Step 2

In a large bowl, pour the buttermilk over the onion petals. Submerge them fully and let them soak for at least 15 minutes while you prepare the coating.

Step 3

In a separate mixing bowl, combine the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, black pepper, and baking powder. Mix thoroughly.

Step 4

Heat the vegetable oil in a deep fryer or large heavy-bottomed pot to 350°F (175°C). Ensure you have at least 3 inches of oil depth for frying.

Step 5

Remove a handful of onion petals from the buttermilk, allowing the excess to drip off, and transfer them to the flour mixture. Toss to coat evenly, then shake off any excess flour. Repeat with the remaining petals.

Step 6

Carefully add the coated onion petals to the hot oil in small batches, being careful not to overcrowd the pot. Fry for 2-3 minutes, or until they are golden brown and crispy.

Step 7

Use a slotted spoon to remove the petals from the oil and transfer them to a plate lined with paper towels to drain. Repeat with the remaining petals.

Step 8

To make the dipping sauce, combine the mayonnaise, ketchup, horseradish, smoked paprika, hot sauce, and lemon juice in a small bowl. Stir until well blended.

Step 9

Serve the crispy onion petals immediately with the dipping sauce on the side.
