Ingredients

  • 3 medium Red onions
  • 3 whole Garlic cloves
  • 4 whole Dried red chilies
  • 1 tablespoon Tamarind paste
  • 1 teaspoon Jaggery or brown sugar
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Mustard seeds
  • 8 leaves Curry leaves
  • 2 tablespoons Water

Directions

Step 1

Peel and roughly chop the red onions and garlic cloves.

Step 2

Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add dried red chilies and sauté for 30 seconds, until they release their aroma.

Step 3

Add the chopped red onions and garlic to the skillet. Sauté for 5-6 minutes, stirring occasionally, until the onions turn golden brown.

Step 4

Stir in the tamarind paste, jaggery (or brown sugar), and salt. Cook for another 2 minutes, allowing the flavors to combine.

Step 5

Remove the mixture from the heat and let it cool slightly before transferring it to a blender. Add 2 tablespoons of water and blend into a smooth paste. Adjust the consistency with a little more water if needed.

Step 6

In a separate small skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat. Add mustard seeds and let them splutter.

Step 7

Add the curry leaves to the skillet and sauté for 10 seconds, being careful as they may splatter.

Step 8

Pour the tempered oil with mustard seeds and curry leaves over the blended chutney and mix well.

Step 9

Serve the Killer Onion Chutney warm or at room temperature as a side dish or condiment of your choice. Store leftovers in an airtight container in the refrigerator for up to 5 days.
