Ingredients

  • 4 pieces Fresh artichokes
  • 2 pieces Lemon
  • 4 pieces Garlic cloves
  • 100 grams Unsalted butter
  • 120 milliliters Dry white wine
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Prepare the artichokes by trimming the stems, cutting off the top inch of the leaves, and removing the tough outer leaves. Cut each artichoke in half and scoop out the fuzzy choke with a spoon. Rub each half with a lemon to prevent browning.

Step 3

Place the prepared artichokes into the boiling water along with the juice of one lemon. Boil for 15 minutes, or until the artichoke hearts are tender when pierced with a knife. Drain and set aside to cool slightly.

Step 4

While the artichokes are cooling, prepare the garlic and white wine butter sauce: Melt the butter in a small saucepan over medium heat. Mince the garlic and add it to the melted butter, cooking for 1-2 minutes until fragrant. Stir in the white wine, salt, and black pepper, and simmer for 3-4 minutes. Remove from heat and stir in half of the chopped parsley.

Step 5

Preheat a grill or grill pan to medium-high heat. Brush the cut sides of the artichokes with olive oil.

Step 6

Place the artichokes cut-side down on the preheated grill. Grill for 6-8 minutes, flipping halfway through, until they develop deep grill marks and a smoky aroma.

Step 7

Transfer the grilled artichokes to a serving platter. Drizzle generously with the garlic and white wine butter sauce and garnish with the remaining parsley.

Step 8

Serve warm with extra lemon wedges on the side for squeezing over the artichokes.
