Ingredients

  • 14 ounces kielbasa sausage
  • 3 medium russet potatoes
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium yellow onion
  • 3 tablespoons olive oil
  • 2 large garlic cloves
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Wash and peel the potatoes. Dice them into 1-inch cubes.

Step 2

Slice the kielbasa into 1/4-inch thick rounds and set aside.

Step 3

Core and seed the red and green bell peppers, then slice them into thin strips.

Step 4

Peel and thinly slice the yellow onion.

Step 5

Mince the garlic cloves and set aside.

Heat 2 tablespoons of olive oil in a large skillet or sauté pan over medium-high heat.

Add the diced potatoes to the skillet and season lightly with a pinch of salt and pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and fork-tender. Remove them from the skillet and set aside.

Return the cooked potatoes and kielbasa to the skillet. Stir everything together and cook for another 3-5 minutes until heated through and well combined.
