Ingredients

  • 1 lb Kielbasa sausage
  • 1 tbsp Olive oil
  • 1 large Yellow onion
  • 3 Garlic cloves
  • 3 medium Carrots
  • 2 Celery stalks
  • 3 medium Potatoes
  • 14.5 oz Canned diced tomatoes
  • 4 cups Chicken or vegetable broth
  • 1 Bay leaf
  • 1 tsp Dried thyme
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Fresh parsley

Directions

Step 1

Slice the kielbasa sausage into 1/2-inch thick rounds. Set aside.

Step 2

Dice the onion, mince the garlic, and chop the carrots, celery, and potatoes into bite-sized pieces.

Step 3

Heat the olive oil in a large soup pot or Dutch oven over medium heat.

Step 4

Add the sliced kielbasa to the pot and cook for 4-5 minutes, stirring occasionally, until lightly browned. Remove the sausage from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes, stirring frequently, until the onion is translucent and fragrant.

Add the chopped carrots, celery, and potatoes to the pot. Sauté for an additional 5 minutes to lightly soften the vegetables.
