Slice the kielbasa sausage into 1/2-inch thick rounds. Set aside.
Dice the onion, mince the garlic, and chop the carrots, celery, and potatoes into bite-sized pieces.
Heat the olive oil in a large soup pot or Dutch oven over medium heat.
Add the sliced kielbasa to the pot and cook for 4-5 minutes, stirring occasionally, until lightly browned. Remove the sausage from the pot and set aside.
In the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes, stirring frequently, until the onion is translucent and fragrant.
Add the chopped carrots, celery, and potatoes to the pot. Sauté for an additional 5 minutes to lightly soften the vegetables.
Pour in the canned diced tomatoes (with their juices) and the chicken or vegetable broth.
Stir in the bay leaf, dried thyme, paprika, salt, and ground black pepper.
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the pot with a lid. Simmer the stew for 20-25 minutes, or until the potatoes and carrots are tender.
Return the browned kielbasa sausage to the pot and stir to combine.
Continue to cook for another 5 minutes to heat the sausage through and allow the flavors to meld.
Remove and discard the bay leaf. Taste the stew and adjust seasoning if necessary.
Garnish with freshly chopped parsley before serving.
