Ingredients

  • 2 tablespoons Olive oil
  • 12 ounces Kielbasa sausage
  • 1 medium Yellow onion
  • 3 medium Carrots
  • 2 medium Celery stalks
  • 3 cloves Garlic cloves
  • 1 pound Dried split peas
  • 8 cups Chicken stock
  • 1 leaf Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Slice the kielbasa into half-inch rounds and brown in the pot for 3-4 minutes on each side. Remove and set aside.

Step 3

Dice the onion, carrots, and celery. Mince the garlic.

Step 4

In the same pot, add the diced onion, carrots, and celery. Sauté for 5-6 minutes until softened.

Add the minced garlic and cook for an additional minute until fragrant.

Rinse and sort the dried split peas, removing any debris.
