  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • 1 bay leaf
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups spinach or kale (optional)

Directions

Step 1

Slice the kielbasa sausage into thin rounds and set aside. Dice the onion, mince the garlic, and chop the carrots, celery, and potatoes into bite-sized pieces.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced kielbasa and cook until lightly browned, about 4-5 minutes. Remove the kielbasa from the pot and set aside.

Step 3

In the same pot, add the diced onion, minced garlic, chopped carrots, and celery. Sauté for 5-7 minutes, until the vegetables are softened and aromatic.

Add the chopped potatoes to the pot, followed by the chicken broth, canned diced tomatoes (with their juice), dried thyme, dried parsley, paprika, bay leaf, salt, and black pepper. Stir to combine.
