Ingredients

  • 14 ounces kielbasa sausage
  • 4 medium red potatoes
  • 3 medium carrots
  • 2 cups broccoli florets
  • 1 large yellow onion
  • 2 tablespoons olive oil
  • 3 garlic cloves
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup chicken broth
  • 2 tablespoons fresh parsley

Directions

Step 1

Slice the kielbasa sausage into 1/2-inch thick rounds. Set aside.

Step 2

Wash and dice the red potatoes into small bite-sized pieces. Peel and slice the carrots into thin rounds. Cut the broccoli into bite-sized florets. Thinly slice the yellow onion. Mince the garlic cloves.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced kielbasa and cook, stirring occasionally, for 5 to 6 minutes or until browned. Remove the kielbasa from the skillet and set aside.
