Ingredients

  • 1 pound kielbasa sausage
  • 2 large russet potatoes
  • 2 medium bell peppers (red, yellow, or green)
  • 1 medium yellow onion
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley (optional, for garnish)

Directions

Step 1

Wash and peel the potatoes. Cut them into small, bite-sized cubes.

Step 2

Slice the kielbasa sausage into 1/4-inch thick rounds.

Step 3

Cut the bell peppers into thin strips and dice the onion.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 5

Add the sliced kielbasa and cook, stirring occasionally, until lightly browned on both sides, about 5 minutes. Remove the kielbasa from the skillet and set aside.

Step 6

Add the remaining 1 tablespoon of olive oil to the same skillet. Add the cubed potatoes and cook over medium heat for 10-12 minutes, stirring occasionally, until they start to become tender and golden brown.

Step 7

Add the diced onion and bell pepper strips to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 8

Sprinkle the paprika, garlic powder, dried oregano, salt, and black pepper over the skillet. Stir to combine.

Step 9

Return the cooked kielbasa to the skillet and stir everything together. Cook for an additional 3-5 minutes to heat through and allow the flavors to meld.

Step 10

Remove the skillet from heat. Taste and adjust seasonings as needed.

Step 11

Garnish with fresh parsley, if desired, and serve hot.
