Ingredients

  • 12 ounces Kielbasa sausage
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion
  • 3 cloves Garlic cloves
  • 4 medium Russet potatoes
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika
  • 2 tablespoons Fresh parsley

Directions

Step 1

Slice the kielbasa sausage into thin rounds. Dice the onion and mince the garlic. Peel and dice the potatoes into bite-sized cubes.

Step 2

In a large pot, heat the olive oil over medium heat. Add the kielbasa slices and cook until browned, about 4-5 minutes. Remove the kielbasa and set aside.

Step 3

In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3-4 minutes.

Step 4

Stir in the diced potatoes and cook for 2 minutes, allowing them to absorb some flavor from the onion and garlic.

Step 5

Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to a simmer, cover the pot, and cook for 15-20 minutes, or until the potatoes are tender.

Step 6

Using a potato masher or an immersion blender, partially mash some of the potatoes in the pot to create a thicker texture. Leave some chunks for a hearty feel.

Step 7

Return the browned kielbasa to the pot and stir in the heavy cream, salt, black pepper, and smoked paprika. Simmer for an additional 5 minutes to combine flavors.

Step 8

Taste the chowder and adjust seasoning as needed. Garnish with fresh chopped parsley before serving.

Step 9

Serve the Kielbasa Potato Chowder hot with crusty bread or a side salad for a complete meal.
