  • 12 oz Spaghetti
  • 12 oz Kielbasa sausage
  • 3 Large eggs
  • 1 cup Grated Parmesan cheese
  • 2 cloves Minced garlic
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Chopped parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.

Step 2

Slice the kielbasa into thin rounds. Heat the olive oil in a large skillet over medium heat. Add the sliced kielbasa and cook for 5-7 minutes until browned and heated through. Remove the kielbasa from the skillet and set aside.

Step 3

In the same skillet, lower the heat to medium-low and add the minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

While the garlic cooks, whisk together the eggs, grated Parmesan cheese, salt, and black pepper in a medium bowl until well combined.
