Ingredients

  • 12 oz dry pasta (e.g., penne, rotini, or fusilli)
  • 0.5 cups chicken broth
  • 1 tbsp Dijon mustard
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley
  • 0.25 cups Parmesan cheese (optional, shredded)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

While the pasta cooks, slice the kielbasa into 1/4-inch rounds.

Heat a large skillet over medium heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter. Once melted, add the kielbasa slices and cook for 3-4 minutes per side, or until browned. Remove the kielbasa from the skillet and set aside.
