Ingredients

  • 14 oz kielbasa sausage
  • 2 14.5 oz cans kidney beans
  • 1 medium onion
  • 3 cloves garlic cloves
  • 1 tbsp olive oil
  • 1 14.5 oz can diced tomatoes
  • 1 cup chicken broth
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.5 tsp ground black pepper
  • 0.5 tsp salt
  • 2 tbsp fresh parsley

Directions

Step 1

Slice the kielbasa sausage into 1/4-inch thick rounds and set aside.

Step 2

Dice the onion and mince the garlic cloves.

Step 3

Heat the olive oil in a large skillet or Dutch oven over medium heat.

Step 4

Add the sliced kielbasa to the skillet and sauté for 3-4 minutes, stirring occasionally, until browned on both sides. Remove the kielbasa from the skillet and set aside.

Step 5

In the same skillet, add the diced onion and sauté for 3-4 minutes until softened.

Step 6

Add the minced garlic to the skillet and sauté for an additional 1 minute, stirring frequently to prevent burning.

Step 7

Add the diced tomatoes, including their juices, to the skillet and stir to combine.

Step 8

Drain and rinse the kidney beans, then add them to the skillet along with the chicken broth.

Step 9

Season the mixture with smoked paprika, dried oregano, ground black pepper, and salt. Stir well to distribute the seasonings.

Step 10

Return the browned kielbasa to the skillet and stir to combine all the ingredients.

Step 11

Reduce the heat to low, cover the skillet with a lid, and let simmer for 15 minutes, stirring occasionally.

Step 12

Remove the lid and give the dish one final stir. Taste and adjust seasoning if necessary.

Step 13

Serve hot, garnished with freshly chopped parsley. Pair with crusty bread or steamed rice, if desired.
