Ingredients

  • 8 ounces kielbasa sausage
  • 6 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Slice the kielbasa sausage into 1/4-inch thick rounds and set aside.

Step 2

Crack the eggs into a medium bowl, add the milk, salt, and black pepper, and whisk until well combined. Set the mixture aside.

Step 3

Heat a large non-stick skillet over medium heat and add the butter. Allow the butter to melt and coat the pan.

Step 4

Add the sliced kielbasa to the skillet and sauté for 5–7 minutes, stirring occasionally, until the kielbasa is browned and slightly caramelized. Remove the kielbasa from the pan and set it aside on a plate.

Step 5

Lower the heat to medium-low. Pour the egg mixture into the same skillet, stirring constantly with a spatula to gently scramble the eggs.

Step 6

Once the eggs are about halfway cooked and still slightly runny, fold the cooked kielbasa back into the skillet. Continue cooking, stirring occasionally, until the eggs are fully scrambled and the kielbasa is heated through.

Step 7

Remove the skillet from heat and transfer the kielbasa and eggs to serving plates.

Step 8

Optionally, sprinkle the dish with fresh parsley for garnish before serving. Enjoy immediately!
