Ingredients

  • 12 oz kielbasa sausage
  • 1 small head green cabbage
  • 3 medium carrots
  • 12 small baby red potatoes
  • 1 medium yellow onion
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (optional, chopped)

Directions

Step 1

Preheat your grill to medium-high heat, or your oven to 400°F (200°C).

Step 2

Slice the kielbasa sausage into 1/4-inch-thick rounds and set aside.

Step 3

Core and chop the cabbage into bite-sized pieces.

Step 4

Peel and cut the carrots into thin rounds.

Step 5

Slice the baby red potatoes in half or into quarters if they are larger.

Step 6

Peel and thinly slice the onion.

Step 7

In a large bowl, combine the cabbage, carrots, potatoes, and onion. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and black pepper. Toss well to coat evenly.

Step 8

Tear off four large pieces of aluminum foil, each about 18 inches long. Lay them flat on your work surface.

Step 9

Divide the vegetable mixture evenly among the four foil pieces, placing it in the center of each sheet. Top each pile with an equal portion of the sliced kielbasa.

Step 10

Fold the sides of each foil sheet up and over the filling to create a packet. Seal the edges tightly to prevent steam from escaping.

Step 11

Place the foil packets on the preheated grill (or on a baking sheet in the oven). Cook for 25–30 minutes, flipping once halfway through, until the vegetables are tender and the kielbasa is heated through.

Step 12

Carefully open the packets (watch out for steam) and sprinkle with fresh parsley if desired. Serve hot.
