Ingredients

  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 0.5 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 1 cup Grated zucchini
  • 0.5 cup Semi-sweet chocolate chips (optional)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the wells with cooking spray.

Step 2

In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

In a large mixing bowl, beat the eggs lightly. Add granulated sugar, brown sugar, applesauce, and vanilla extract, and whisk until well combined.

Stir the grated zucchini into the wet mixture. If the zucchini seems very wet, gently squeeze out some excess moisture using a kitchen towel before adding.
