  • 3 cups Rolled oats
  • 0.5 cup Pumpkin seeds
  • 0.5 cup Sunflower seeds
  • 0.5 cup Unsweetened shredded coconut
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Maple syrup
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 1 cup Dried cranberries (or other dried fruit like raisins)

Directions

Step 1

Preheat the oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, pumpkin seeds, sunflower seeds, shredded coconut, cinnamon, and salt. Stir until evenly mixed.

Step 3

In a small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until smooth.

Pour the wet ingredients over the dry ingredients and mix well, ensuring all the oats and seeds are evenly coated.
