Ingredients

  • 500 grams boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 1.5 cups white rice
  • 3 cups chicken broth
  • 1 medium carrot (finely diced)
  • 0.5 cups frozen peas
  • 1 small yellow onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon soy sauce
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Heat a large skillet or saucepan over medium heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter.

Step 2

Once the butter has melted, add the chopped onion and carrots. Sauté for 3-4 minutes until the vegetables are softened.

Step 3

Add the minced garlic and cook for another 30 seconds, stirring constantly to avoid burning.

Step 4

Push the vegetables to one side of the pan and add the remaining 1 tablespoon of olive oil. Add the chicken pieces and cook for 5-6 minutes, stirring occasionally, until they are lightly browned and cooked through.

Step 5

Stir in the soy sauce, salt, and black pepper to season the chicken and vegetables evenly.

Step 6

Add the rice to the skillet and stir it gently for 1-2 minutes to coat it in the oils and seasonings.

Step 7

Pour in the chicken broth and stir well. Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a lid.

Step 8

Let the rice cook on low heat for 15-18 minutes or until the liquid is absorbed, and the rice is tender.

Step 9

When the rice is nearly done, add the frozen peas on top. Cover the pan again and let it cook for an additional 5 minutes.

Step 10

Fluff the rice gently with a fork, mix in the peas, and adjust seasoning if needed.

Step 11

Serve warm and watch the kids enjoy their favorite chicken rice dish!
