Ingredients

  • 12 oz Elbow macaroni
  • 4 tbsp Unsalted butter
  • 3 tbsp All-purpose flour
  • 3 cups Whole milk
  • 1 cup Half-and-half
  • 3 cups Cheddar cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 0.5 tsp Garlic powder
  • 1.5 cups Breadcrumbs, plain
  • 2 tbsp Unsalted butter, melted
  • 0.25 tsp Paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Step 3

In a large saucepan, melt 4 tablespoons of butter over medium heat. Once melted, whisk in the flour and cook, stirring constantly, for 1-2 minutes to form a roux.

Step 4

Gradually pour in the milk and half-and-half, whisking continuously to prevent lumps. Cook for 3-5 minutes, or until the sauce thickens.

Step 5

Remove the saucepan from heat and stir in the cheddar, mozzarella, and Parmesan cheeses. Mix until smooth and creamy. Season with salt, black pepper, and garlic powder.

Step 6

Add the cooked macaroni to the cheese sauce. Gently stir until well combined, then transfer the mixture to the prepared baking dish.

Step 7

In a small bowl, mix the breadcrumbs with 2 tablespoons of melted butter. Sprinkle the breadcrumb mixture evenly over the macaroni and, if desired, lightly dust with paprika for added color.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.

Step 9

Remove from the oven and let cool for 5 minutes before serving. Enjoy!
