  • 1 tsp chili powder
  • 1.5 cups beef broth
  • 2 tbsp all-purpose flour
  • 4 russet potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 0.5 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large pot, add the peeled and cubed potatoes. Cover them with water and bring to a boil. Cook for 15–20 minutes, or until fork-tender.

While the potatoes cook, heat olive oil in a large skillet over medium heat. Add the diced onion and carrots, and sauté for 5–7 minutes until softened.

Stir in the minced garlic and cook for an additional 1 minute.

Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and fully cooked, about 7–10 minutes. Drain excess grease if necessary.

Stir in the tomato paste, Worcestershire sauce, smoked paprika, and chili powder. Cook for 2 minutes to allow the flavors to meld.

Sprinkle the flour over the beef mixture and stir to combine. Gradually pour in the beef broth, stirring continuously to avoid lumps. Let the mixture simmer for 5 minutes until thickened.

Stir in the frozen peas and season with salt and pepper to taste.
