Ingredients

  • 4 large potatoes
  • 4 tablespoons unsalted butter
  • 0.5 cup whole milk
  • 1 cup cheddar cheese
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 2 medium carrots
  • 2 medium celery stalks
  • 2 large garlic cloves
  • 1 pound ground beef
  • 1 pound ground lamb
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef broth
  • 1 cup frozen peas
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel the potatoes and chop them into equal-sized chunks. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes or until tender.

Step 2

While the potatoes are boiling, finely dice the onion, carrots, and celery. Mince the garlic cloves.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the onion, carrots, and celery and sauté for 5-7 minutes until softened.

Step 4

Add the garlic to the skillet and cook for an additional 1 minute until fragrant.

Step 5

Increase the heat to medium-high and add the ground beef and ground lamb to the skillet. Cook, breaking up the meat with a spatula, until browned and cooked through, about 7-10 minutes.

Step 6

Stir in the tomato paste, Worcestershire sauce, paprika, cayenne pepper, thyme, salt, and black pepper. Cook for 2 minutes.

Step 7

Pour the beef broth into the skillet and stir well. Reduce the heat to a simmer and cook for 10 minutes, allowing the mixture to thicken.

Step 8

Stir in the frozen peas and cook for 2 more minutes. Remove the skillet from heat and set aside.

Step 9

Drain the cooked potatoes and return them to the pot. Add the butter, milk, and half of the cheddar cheese. Mash everything together until smooth and creamy. Season with salt and pepper to taste.

Step 10

Preheat your oven to 400°F (200°C).

Step 11

Transfer the meat mixture into a 9x13-inch baking dish and spread it out evenly.

Step 12

Spoon the mashed potatoes over the meat mixture, spreading them to cover the filling completely. Use a fork to create texture on the surface of the potatoes.

Step 13

Sprinkle the remaining cheddar cheese over the potatoes.

Step 14

Bake the pie in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

Step 15

Let the cottage pie rest for 5-10 minutes before serving. Enjoy your Kickin Cottage Pie!
