Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 cup Buttermilk
  • 1.5 cups All-purpose flour
  • 0.5 cup Cornstarch
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cups Vegetable oil
  • 0.5 cup Mayonnaise
  • 0.25 cup Sweet chili sauce
  • 2 tablespoons Sriracha
  • 1 tablespoon Honey
  • 2 stalks Green onions (sliced)

Directions

Step 1

Cut the chicken breasts into bite-sized pieces, approximately 1 inch each.

Step 2

Place the chicken pieces in a bowl and pour the buttermilk over them. Let the chicken marinate for at least 15 minutes (or up to 4 hours in the refrigerator).

Step 3

In a separate bowl, mix together the flour, cornstarch, garlic powder, paprika, salt, and black pepper.

Step 4

Drain the chicken pieces, allowing excess buttermilk to drip off, then coat each piece in the flour mixture. Shake off any excess flour.

Step 5

Heat the vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).

Step 6

Fry the chicken in batches, making sure not to overcrowd the pan. Cook each batch for 5-6 minutes or until the chicken is golden brown and cooked through. Remove the chicken and drain on a paper towel-lined plate.

Step 7

In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey to create the Bang Bang sauce.

Step 8

Transfer the fried chicken to a large mixing bowl, then drizzle the Bang Bang sauce over the chicken. Toss gently to evenly coat.

Step 9

Garnish with sliced green onions and serve immediately. This dish pairs well with steamed rice or as part of an appetizer spread.
